Description
Our organic immortelle essential oil for foods is obtained from the species Helichrysum italicum. The product is offered under the name Immortelle organic essential oil for food. The species belongs to the family Asteraceae and grows as a perennial subshrub whose small yellow flower heads keep their shape when dried. The flower heads grow on plantations in Bulgaria, and the farmers cultivate the crop under an organic regime that excludes synthetic fertilizers and other synthetic substances. The plantations yield flowering tops, and the harvest is done by hand in the first weeks of summer. The tops provide a fully organic composition, free from preservatives and colorants. The composition includes the volatile compounds of the flowers, among which science identifies neryl acetate, the italidione ketones and representatives of the sesquiterpenes. Organic cultivation maintains this purity, as the plants develop without outside interference. The purity of the composition is complemented by steam distillation, which separates only the volatile molecules from the floral material of the flower heads. The method therefore preserves the fragrance in its natural form. The advantages start with the organic raw material, together with the manual selection of the flowering tops. The selection of the flowering tops shows in the pale yellow color of the oil, because the denser pigments remain in the plant mass and do not pass into the volatile fraction. The color accompanies the liquid consistency, which remains homogeneous and fluid. The fluid liquid carries a fragrance of medium strength, in which warm sweetness rests on a herbal-woody base. The herbal-woody base is due to the sesquiterpenes, which steam distillation carries into the finished oil.
Application
Added in small quantities, immortelle oil gives cakes, desserts, jams and chocolate products a characteristic warm note with honeyed sweetness, a herbal taste and a light woody depth. In confectionery it is used in ganache, pralines and sugar confectionery, replacing or complementing floral flavors such as lavender and rose. It is suitable for flavoring syrups, liqueurs, tinctures and special non-alcoholic drinks, and when added to teas and herbal blends it brings additional character without overpowering the other ingredients. Chefs also include it in sauces, spices and specialty gourmet salts, where its botanical profile emphasizes citrus or vanilla notes in the recipe. It pairs well with red meat and game, adding a finishing touch to spicy and complex flavor combinations in cooking. A few drops are enough for an expressive effect, as the aroma is highly concentrated and quickly develops its character during heat treatment or when mixed directly with cold liquids. Thanks to its sweet, warm, herbal and woody profile, the oil is also used to add a finished flavor accent to dessert creams, glazes and fillings, as well as in experimental recipes by modern chefs seeking an authentic and recognizable natural aroma for their creations.
